These muffins are a family favorite. I make them all the time. I made them this morning. However - today I substituted 2/3 of the sugar for Stevia. They were just as delicious. If you're concerned about the amount of sugar in your diet, I've found that substituting 1/2 to 3/4 of the sugar for Stevia in most baked goods generally makes little difference in the taste and consistency of the final product. These muffins were still a moist, flavorful, decadent way to start out our weekend.
Moist, tender and light Lemon Blueberry Muffins with a buttery crumb topping and tart lemon glaze. The perfect morning or afternoon treat.

Here in Colorado, for a few weeks in August and September, we are spoiled with the BEST peaches in the world. So, obviously, if I was going to make a crepe cake this time of year, it was going to include peaches.
This crepe cake includes layer upon layer of buttery crepes, vanilla pastry cream, fresh peaches and whipped cream.

This recipe started out as raspberry muffins. But, then I got lazy and decided to just pour all the batter into a loaf pan and call it raspberry bread. And you know what? I like it best this way.

Italian Meringue Buttercream is sublime. It’s silky smooth, not overly sweet and positively etherial. It holds up well and is a dream to frost and decorate with. It’s so delicious, even all of you non-frosting eaters will be tempted to devour it by the spoonful. It is by far my favorite frosting. In fact, it’s the only frosting I ever make.
