Last month, our beloved cantuccini gained the Protected Geographical Indication, set up to promote and protect the names of quality agricultural products and foods.
Our recipe for them is always a hit!
In January 2016, the delicious straight almond biscuits known as Cantucci (or Cantuccini) Toscani earned their place on the IGP list.

Monday was the national day of ribollita in the Italian Food calendar. It is one of the best-known dishes from Tuscany, and follows the tradition of “cucina povera”: “poor man’s food”.
Healthy comfort food for a cold day!
This soup improves if left for a day or so. We make a large batch and have it in varied ways - without the bread soaked into it but served on top of hot toast rubbed with raw garlic or with the bread and served at room temperature.

Schiacciata alla Fiorentina is a fluffy, delicately scented Mardi Gras cake from Florence. It is one of the dairy-free desserts that we make during our cooking courses in Italy. In the past, this cake was made with lard, the fat that was in popular use at the time. The one that we make on our cooking courses is made with sunflower oil. It is delicious filled with whipped cream, or just by itself! Happy Martedì Grasso!

The pilgrimage route to Rome was and is known as the “Via Francigena”. Despite its name “The road that comes from France”, it is generally thought to originate in the English Cathedral city of Canterbury.
Some visitors to Italy can’t wait to go on a Vespa tour or to go to the Ferrari museum. But it’s nice to slow down the pace and use your two feet to get from A to B, just as the locals used to do for so many centuries.

This review is long overdue, but the Organic Tuscany Cooking experience was so wonderful and memorable, it remains as the special highlight of the year. To begin, the staff were warm, generous and helpful and provided a well rounded genuine and unique Tuscan experience in cooking and culture, with unforgettable side tours to local vineyards, cheese farms, olive oil and wine tasting. The food we made was seasonal and delicious and we came away with wonderful recipes and techniques we could replicate at home. The atmosphere was always welcoming, entertaining and low key and the accommodations were great. The other participants quickly became good friends and the time we had together was unsurpassed in enjoyment, and lasting lifelong memories. Suffice to say, would do this again in a heartbeat!

Our week with Organic Tuscany couldn't have been more wonderful. The staff made us feel like family and the food was scrumptious. Not only did we enjoy relaxing by the pool and the homemade Italian meals, but we enjoyed seeing cities nearby. It was a lovely combination of culture and cooking. Booking with Organic Tuscany was one of the best travel decisions I have ever made. I wish I could go back again and again and again.

My wife and I had the pleasure of taking part in the Organic Tuscany experience and I can say without reservation that it was an absolute pleasure start to finish. Shilpa was an amazing host who was both caring and organized. The balance between learning to prepare some of our own Italian meals and being absolutely spoiled by having delicious meals prepared for us was perfect. The setting was stunning and enjoying a meal with the other guests while overlooking the Tuscan countryside was an experience I will always treasure. It is with great enthusiasm that I can recommend Organic Tuscany!

My best friend and I booked as an alternative to a beach holiday. We fancied doing something a bit more interesting that would leave us with more than a set of photos of a beach! We didn't regret our choice. The whole experience was wonderful; the whole team were fantastic, trying to be as flexible as they could be to accommodate our every need; the cooking was really well delivered, with great recipes that we brought home with us and have used many times since; the experience of mixing with a small number of fellow guests was wonderful, we were very lucky that we met people from all over the world and with very different stories. We have made friendships that have continued since our visit and on all levels I would recommend this holiday as a 'hard to beat' experience. Advice? Embrace the whole - and take mosquito repellant in the summer if you're susceptible.

Thank you Shilpa and everyone at Organic Tuscany for a wonderful week of cooking, eating, laughter and the ‘Tuscany Experience’. The cooking classes were so informative and such fun. The relaxed atmosphere, food and the people, made the week a holiday to remember. The new villa looks lovely and I would love to come back again. Anyone thinking of taking a trip to Tuscany to a cooking school, don’t miss this one. Best, Diana.

We had a wonderful time. The owners/staff were very friendly and hospitable. The cooking classes were fun and the food delicious. Our tour guides were charming. I think we made lasting friendships with our classmates.

If you are traveling to Italy this must be on the top of your list! I took my two adult children to Organic Tuscanny this past September as part of our 2 week dream Italy trip. The cooking school was the highlight of our trip!!! We loved the hands on cooking classes, our lodging and the side trips. Shilpa and her family became our friends. If I close my eyes I can still smell the wonderful aroma of the ragu sauce we prepared and picture the star scape sky from my window at night. I have made several of the dishes since returning to the USA. I will never forget this amazing place!!!!!

My experience at Organic Tuscany was wonderful. Shilpa and Riccardo were excellent hosts and the staff was competent and fun to be with. The cooking classes and the foods we made were fun to do and delicious to eat. The wine tasting, olive oil tasting, the outings were informative and enjoyable. I would highly recommend this experience to anyone interested in cooking and seeing Tuscany.
