COD WITH PEAS AND EXTRA VIRGIN OLIVE OIL 
Ingredients (4 people)
300 g of peas
300 g of desalted cod
50 g carrots
1/2 fresh onion
2 cloves garlic
1 medium potato
homemade tomato sauce
½ cup extra virgin olive oil, Picual (La Olivarera) https://oliveoilflavors.com/en/20-picual-

Pinch of salt
Preparation
In a pan with a few tablespoons of Extra Virgin Olive Oil variety picual (La Olivarera) and moderate temperature, fry lightly the onion and garlic, finely chopped both. When the onion is browned we add the green peas, carrots, peeled and cut into small cubes both.
Stir the sauce with vegetables so it absorbs the aroma of onion, garlic and the olive oil flavors; add spoonfuls of homemade tomato sauce and dip just to cover the stew. We let cook stew simmer for 30 minutes, once the green peas are tender, remove from the heat. We added a few pieces of desalted cod, cover the pan and let the fish cook off the heat, only the heat from the stew of beans. After 5 minutes of rest, try the salt, sprinkle with a little chopped parsley and take another rest 10 minutes before serving.
