coffee has a lot of microscopic particles and they don't settle - unless its a turkish style coffee. It's a good question of when a molecule should be considered a particle, like a protein, for example, but for coffee the particles are definitely in >1 nm range and not settling over time - coffee doesn't become clear over time, neither does milk or cream.

I think coffee ring effect should happen whenever there is a rapidly evaporating liquid front with pinned line - so it should happen at the top of the cup too if evaporation is fast enough. I do get a line when I drink espresso but it may be floating particles too, who knows.
