Roti | Parathas

Roti | Parathas are the staple breads for Indians. The word roti is derived from the sanskrit word "rotika" meaning bread. This has a good reputation not only in India and its neighbouring country but also in Indonesia, Malayasia and as well as West Indies known in different names. These flat breads are a plain canvas. All you need is some flour and water to begin. From there, you can add, substitute or subtract any ingredient and make a roti. When you follow the same and get some nice stuffing to fill the rotis, you get Parathas. That's easy right? So you can let your culinary creativity flow without a curb. Its highlighting characteristic is that, it is unleavened and does not require fermentation of the dough. This page has a collection of roti varieties.

Dadpe Poha

Raw Poha mixed with fresh grated coconut, ginger and lime juice. Unlike the other Poha variations, this is not cooked and is made with thin poha. Just like the dum process, everything is mixed together and covered with a lid and some weight is kept on top , so that the flavours are well absorbed. "Dadapne" means to press or under weight in Marathi. Hence the name Dadpe Poha.

Food happens a lot in our life and we hold a strong propinquity with it. Many of our sublime and intimate memories are associated with food. It evokes the subconscious mind and jogs up memories, some good and some bad. It is always held close to heart. This is one of the dishes that is too close to my heart and is woven with intricate memories.
