Thanks for a great day folks! You did a great job making lunch... Coconut Crisps and Plantain Chips, Jerk Chicken with Pineapple Salsa, Plantains Wrapped in Bacon, Red Beans and Rice, Green Salad, and Coconut Tarts.

This class was title "Late Lunch with the Girls".  For the class we made a light lunch of Blackened Mahi Mahi Tacos with an Avocado-Cilantro Sauce, some Plantain Chips with Pineapple Salsa, and mini gluten free Passion Fruit Cheesecakes.  We recorded the class in full and will be releasing the video in a couple of weeks.  This will be the first in a series of monthly videos where we will pick a recipe we never tried before and make it for internet friends... all while enjoying a good rum punch or two.  After a few months, we'll then broadcast live.  That should be interesting!

Such a lovely couple!  We made Coconut Crisp and Plantain Chips and Grilled Shrimp with Avocado in Crispy Wonton Cups for the appetizer, Grilled Mahi Mahi with Mango Salsa, Red Beans Rice, and Rainbow Salad for the main... and Coconut Tarts for the finish.
