Not sure what to make for the holidays? Shortbread Fudge Bars to the rescue. It combines two of our favorites, Grandma’s shortbread and chocolate fudge, made from @Enjoy Life Foods chocolate chips. Was it a HIT!!! Not only did my little guy absolutely love having his own special treat, but also, his friends couldn’t resist these bars either. You know you have something good when your friends tell you they’d go vegan with desserts like this.

Some of my favorite parties to host are football parties. I love watching the game! I love the commercials! I love getting together with good friends! I love the excitement of a close game, but most of all…. I ❤️ the food!

Homemade chili, hasselback potatoes, papas nachos, brownies, and cookies typically grace my countertop and now that football season is back, I’m adding something new to the menu, homemade Tex Mex Egg Rolls.

I’m seriously in love with these little egg rolls. They are deliciously addicting, chewy and cheesy on the inside and warm and crispy on the outside, just like they should be. And if I had to pick just one party appetizer as my absolute favorite, this would be it! These Tex Mex Egg Rolls are ridiculously good!

My friend Heather is NOT pumpkin lover by any means but she was willing and tried a piece of my Pumpkin Cheesecake (isn’t that a real friend?). Anyways, as it turned out, she ate the whole thing and in fact, made me swear I put this on my blog, pronto! Then, my husband, who does love pumpkin but is lovingly critical of all things vegan, let me know that this was one of the best desserts I’ve made.

So, if my pumpkin-hating friend and my non-vegan husband rave about this dessert, then I just HAVE to include it, right? Here’s to Vanilla Pumpkin Swirl Cheesecake!

As the weather starts to cool and the Halloween costumes start coming out, I really start to crave all things Pumpkin. Pumpkin Cupcakes, Donuts, Spiced Lattes, Pumpkin Cheesecake, Pumpkin Cookies and especially Pumpkin Pie.

But when I started baking to keep Xander safe, one of the first holidays we encountered was Thanksgiving, which of course, is just not the same without Pumpkin Pie! It was really hard to find a recipe that didn’t use evaporated or condensed milk and a dairy-free option of this sweetened milk just wasn’t available 10+ years ago. Thankfully, after a lot of tweaking, I was able to make my Grandma’s favorite pumpkin pie, allergy-friendly. It is now always on our table during the holidays.

When you see all the chocolate recipes on this blog, it’s probably hard to believe that I actually prefer vanilla. For me, vanilla is the perfect foundation to add whatever toppings, fillings or mix-ins your little heart desires. Vanilla smoothies, vanilla nice cream, vanilla cake ….. can all be jazzed up with berries, sprinkles, chocolate, nut-butters, coconut, candies…..you name it! BUT, more important than the mix-ins, is starting off with a yummy base.

This vegan vanilla cupcake uses easy to find, allergy-friendly ingredients to make its batter, such as gluten-free flour, coconut milk and vinegar (instead of eggs). It is free from dairy, eggs, nuts, gluten, and come to think about it, it’s also Top 8 Free.

AND the batter whips up in a matter of minutes. Just whisk the dry ingredients and wet ingredients separately then combine them all together. Done!

I’m back to doing a healthier energy bite recipe which I know you will all love! It is made up of wholesome gluten-free oats and ground flaxseed mixed with delicious SunButter, agave, and pretzel bits which creates the most scrumptious make-ahead energy bite. You guys!! These SunButter Energy Bites are sooooo good! If you need a no-bake make-ahead snack recipe, then this needs to go on your menu, stat!
