It's always on the weekend that we want to indulge a bit...Do it a bit less guilt free with this HEALTHY(er) Lasagna recipe! Here's the ingredients, and click the link for super easy-to-follow instructions! - Ingredients

1 large onion, finely diced
1 green pepper, finely diced
2 cloves garlic, minced
1 lb. ground turkey or lean ground beef
4 links of turkey Italian Sausage
1 economy sized jar spaghetti sauce of your choosing 
3/4 c. water
32 oz. container ricotta cheese (I used part skim)
2 + 1 c. mozzarella cheese
1 + 1/2 c. Parmesan cheese
1/2 c. liquid egg substitute (or 2 eggs, or 3 egg whites)
1 box whole wheat, high fiber lasagna noodles (whatever you buy, look for the kind that doesn't require you to cook the noodles first)

This is an amazing dinner! Zucchini Boat Turkey Tacos 

Serves: 4
 
Ingredients
4 medium zucchini
1/2 cup salsa (plus more for serving)
1 pound ground turkey
1 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon salt, or to taste
1 teaspoon chili powder
1 teaspoon paprika
1/2 small onion, minced
4 oz tomato sauce
1/4 cup water
1/2 cup (or so) shredded Mexican cheese blend
sour cream, optional for serving
 
Directions
1. Bring a large pot of salted water to boil.
2. Pour 1/2 cup of salsa into the bottom of a 9×13 baking dish and set aside.
3. Cut the zucchini in half lengthwise then with a small spoon or melon baller (I used my tablespoon measuring spoon), hollow out the zucchini pieces but leave 1/4″ rim. Save 3/4 cup of the zucchini flesh and chop into small pieces.
4. Drop the zucchini halves into the boiling water and cook for one minute. Remove from water and set aside.
5. Preheat the oven to 400 degrees.
6. In a large skillet, brown the ground turkey, breaking it up while it cooks. When it’s no longer pink, add in the spices and mix well.
7. Add in the chopped onion, reserved zucchini, tomato sauce, and water. Stir it up then cover and simmer on low for 20 minutes.
8. Meanwhile, arrange the boiled zucchini halves into the bottom of the 9×13 dish.
Once the meat mixture is done, spoon the mixture into the zucchini boats evenly. Press down so the filling stays in the boats.
9. Top each half with a sprinkle of cheese.
10. Cover the pan with foil and bake for approximately 30 minutes until the zucchini is fully cooked and the cheese is melted.
11. Serve with sour cream and more salsa.

Recipe for today is Chicken Apple Slaw! Easy summertime lunch with just the right amount of sweet and crunch!
Ingredients
1 cup of shredded cabbage
3oz of cooked chicken breast (diced)
1 med Apple (diced)
1 tsp Dijon mustard (check the ingredients) 1 tbsp Apple Cider Vinegar
Directions
Dice cooked chicken and apple (I like to use green apple for this) and place in a medium sized bowl. Toss in shredded cabbage. In a small bowl mix together the vinegar and mustard (you can add a couple drops of stevia to give it a sweeter taste). Pour vinegar mixture over the cabbage and toss till everything is coated. You can eat it right away for let to chill for later.

Picky eaters in your house? Try this for-sure kid pleaser one night this week! 

Baked Seasoned Chicken Nuggets 

·        1 lb. boneless chicken breasts (or tenders), cut into small bite sized pieces (1/2-inch by 1-inch)
·        3 teaspoons canola oil
·        1/2 teaspoon kosher salt
·        1/2 teaspoon Italian herbs
·        1/2 teaspoon garlic salt
·        1/4 teaspoon oregano
·        1/4 teaspoon black pepper
·        3 tablespoons panko bread crumbs
·        2 tablespoons Parmesan cheese
·        Cooking spray (Misto cans work best)

1.     Preheat the oven to 450°.
2.     Add the chicken with the oil followed by the salt, Italian herbs, garlic salt, oregano, and black pepper. Massage the chicken with the spices thoroughly.
3.     Add the chicken, panko bread crumbs, and Parmesan cheese to a zip top bag. Seal the bag and squeeze the bread crumbs onto the chicken multiple times (as shown in the photo).
4.     Spray a baking sheet with cooking spray.
5.     Lay the breaded chicken nuggets on the baking sheet in a single layer.
6.     Spray the top side of the chicken with cooking spray.
7.     Bake for 8 minutes on each side.
8.     Serve immediately.
