SUPER BOWL CARROT NOODLES! Carrot is a very good source of Vit A, Beta Carotene and Lycopen, Lutein Phytonutrients. Malunggay is also a good source of Vit A and the Polyphenol Phytonutrient.

I found some Organic Noodles that's been sitting in the pantry for sometime. I thought why not make a true and simple veggie based noodle snack with no artificial flavoring.We sauteed the chopped carrots first in vegetable oil and a little bit of homemade chicken stock, until soft but don't make it soggy.

The noodles cooked very quickly in about 4 minutes. Drain away the liquid. Mix the noodles and the cooked carrots in a bowl and season it with just a bit of Soy Sauce - or you can use Braggs if you fancy getting it all organic:) Add a dash of sesame oil and you have a simple, healthy and tasty snack. Rating 3:3 - all 3 kids ate it

My doctor - a holistic medicine practitioner taught me about 4 years ago to practice the 80-20 Rule: eat 80% greens& fruits with emphasis on leafy veggies and 20% clean,lean protein. And throw out canned & processed foods. For persons with illness or cancer this doctor recommends scrapping out sugars, meats and dairy completely. The shift didn't happen for us over night. Later we started adding raw foods of veggies and fruits. You may want to consider this, next time you plan your meal :)

Oh MICROGREENS!! This was our pot of baby greens at home,
before the dog messed it up. I am hearing a lot of good things about microgreens; nutritious, easy to grow indoors, pretty for plating and the taste is more pleasant compared to grown green leaves. Would you try growing them?
