Damn, look at them gizzards! My dad used to make soup with gizzards and he didn't even clean them out so they were still full of grit. Tastes great, stays crunchy!

It is indeed bouquet garni :) And some carrot, onion celery, cloves and peppercorns. And three chickens' worth of bones. There is going to be SUCH a soup.
