Easy pulled chicken tacos
are great for a low energy night
I'm still not feeling super perky, so I decided to slow roast a chicken for a couple of meals prep, and use some tonight for tacos with fresh tortillas - charred red onions and purple peppers, salsa and guacamole on top, and some fresh from the garden Brandywine tomato.
