This recipe for “Tilapia Fillets Cooked Veracruz Style” is a shortcut to the original recipe of “Red Snapper Veracruz Style”, where the whole fish is cooked in the sauce. When prepared this way, you will have dinner ready in less time and will still be able enjoy the same authentic flavors of the whole fish version. You can use other type of fish fillets instead of tilapia fillets, since not every fish is available on your areas.

Crispy potato tacos, folded or rolled corn tortillas filled with creamy potatoes, known in Spanish as “Taquitos Dorados de Papa”, is one of the most popular dishes that are loved by young and old. You don’t need many ingredients to make them, and they can even be prepared ahead of time and reheated the oven. They’re usually eaten for dinner time, and are a very popular meal during lent time, when some families restrain from eating meat.

This recipe for “Guava Compote,” or “Guavas in Syrup,” can be prepared in a matter of minutes, with really few ingredients. It can be served warm or cold, by itself or over ice cream, yogurt or even pound cake. At home we love to make smoothies with it by combining the guavas with kefir or yogurt.

I’m sharing with you a quick appetizer called Deviled Sausages (Salchichas a la Diabla), it is really quick and easy to prepare, and it is commonly cooked in my country for those times when you are watching the game with your friends, and also showing you a party tutorial to display the Mexican appetizers for your own Game day party.

Mogo Mogo (also called “Machuco”) is a sweet and salty puree that is just one of the many ways that people in the Tuxtla’s region in Veracruz cook plantains. Not only in that region, but all over states like Tabasco, Oaxaca and Chiapas there is a great diversity of dishes using plantains in everyday cooking. This easy recipe requires few ingredients, and is super quick to prepare with delightful results. It is one of those things that you can’t ...

This jicama citrus salad from the Yucatan is known as Xec or Xe’ec from the mayan word “ensalada” (salad), also know by other names like check and sheck. It is a healthy quick and easy to dish to prepare. It's sweet, salty, spicy, crunchy and delicious. A classic side dish during the Day of the dead, since it is traditionally served after the popular Yucatan tamal for the day of the dead Mucbipollo has been eating.

These unique and delicious black bean and pork crackling tamales are a traditional recipe from the state of Tabasco. They are usually flavored with the addition of “Hoja Santa” a very aromatic leaf used for cooking in several states of Mexico. I didn’t add it this time, but if you find it either fresh or in the dried version, add a little piece of it to each of the tamales.

This is a very delicious way to prepare nopales, the addition of the tomato sauce creates a complete meal when served with rice and corn tortillas. In just one plate you have your protein, vegetables and grains. And even though they have small piquin peppers, this is a mild stew. Of course, if you like to make it spicier, just add more peppers.

Mole de Olla is a rich soup with a little bit of mole flavor. It has many variations across the country, but is more popular in the central states of Mexico.Cooked slowly over the stove, this dish is a robust meal; the bone-in pieces of meat create a nutritious broth, and the vegetables like carrots, chayote, squash, corn, green beans, and xoconostles form a perfect combination of flavors. For a faster way to cook this meal, you can use your pres...

This is a very fast, easy, and healthy recipe. Chicken cooked this way is called pollo a la plancha (griddle chicken) in Mexico, and you can find it on some restaurant menus. Many people eat this meal when they’re on a diet, and it’s even recommended by doctors when you need to lose some extra pounds. Not only chicken, but also steak and vegetables cooked this way are called a la plancha or asado. This method of cooking is especially helpful at t...
