Sounds to me like she has a case! I think that companies have been taking advantage of 'internships' replacing real workers in a number of industries for years now, and it's about time someone took them to court for it. Unpaid internships should be about educational experience and not about replacing entry-level labor! Even though people know going into these positions that it is essentially unpaid work does not mean that they should have to forego the experience--it does look good on their CV, and they should have the right to bring the company to court for violating the legal restrictions of an internship position. I hope she wins!
