Oh, and I'll leave the whole "resting" thing alone. Meathead is certain that he's since disproved the theory of needing to rest to keep those juices (that you previously seared the meat to keep in) in the meat. :-P

I say all of that tongue-in-cheek. Meathead is a friend and a great BBQ technologist.
