Hey Guys, a little urgent question that you might know the answer to. I'm picking up about 20L of apple juice later today and I've been told that apples here lack the appropriate acidity. Juice is suppose to have a ph of 4.0 when we want 3.2. I've bought pure ascorbic acid but I have no idea of how much should I put in there. I bought PH paper but I would like not to use try and error to get it right.

+Joshua Saunders, I'm making cider with apples that are sweeter and have lower acidity than normal; our mix is Paula Red, McIntosh and Delicious Yellow. I was following advice from both the great reference. Cider: Making, Using and Enjoying by Lew Nichols and Northern Brewers' cider making guidelines that suggested a pH of [3.2, 3.8] before fermentation. I wasn't too fond of try and error with pH paper for the reasons you mentioned so I ended up using Northern Brewer's recommendation and by "luck" it got us right on the money. Tannins, Potassium Metabisulfite, and yeast nutrient and chaptalization were done at the same time.

It's not the best Indian I've ever eaten but it's pretty good all around. Food is great yet somewhat expensive. Service is impeccable. I recommend their India Pale Ale.
