Smoothies are a year round thing in my house, not as much with Zoe, but Eli and his peeps love them! It can be cold and pouring out and Eli and his peeps will still want a smoothie. Beet, ginger and coconut soup! This is a simple, healthy, beautiful and vegan winter weeknight soup. This soup tastes like beets, but the ginger, coconut oil and coconut milk help to soften the earthy flavor of the beets and gives them a subtle sweetness. The pureed texture of the soup is creamy, light and soft!

These roasted sweet potato halves are honestly one of my new favorite things of 2016! I know you’re all looking for easy, weeknight, tasty, healthy, kid approved recipes, and these sweet potatoes hit every mark! These sweet potatoes come out all soft and sweet in the centers and caramelized on the edges. I love them all slathered with coconut oil and coarse sea salt. These only take 30 minutes to roast up and make the perfect side dish or meatless meal paired with a salad!
