Sure look at me I'm nearly finished studying to become a nutritional therapist, a life-long dream!! 5 Simple Tips if a Vegan and Coeliac Guest is Coming to Dinner on Christmas Day

An oldie blog post but some useful tips to help you cater for a Christmas guest/family member that needs gluten-free and vegan food. I'm one of them so know what I'm talking about. I saw a woman fretting in a shop the other day and ended up with a stew to freeze - glad I wasn't going to her house to get a stew a couple of weeks old on Christmas Day! An easy and nutrititious quick lunch. Packed with nutrients. Couldn't be any easy. A simple lemon and extra virgin oil would work with this too. Just we wanted to keep it very quick. Arrange all the ingredients on the plate in a way that's pleasing to the eye and then dig in and enjoy.

Perfect lunch, or afternoon snack, for the busy and wonderfully caring Christmas shopper. You're bustling around the place like a lunatic, buying all you can for a fabulous festive feast and thoughtful presents. Remember though look after yourself and eat healthy as much as possible. You don't want to catch a cold or worse and ruin your enjoyment, especially after your efforts. Here's a wonderfully easy plant-based recipe, packed with nourishing goodness. You could even leave it in the car (in a small cooler bag) in the shopping centre and go back and nibble on it halfway through shopping.

It's also an ideal treat for a vegan or plant-based eater, or yourself if you're looking for something fresh and light over the Christmas.

130g dark chocolate*; 80g almond butter (we used Monki brand); 140g spelt puffs (we used a brand which had oats and spelt mixed and used honey to sweeten); 100g apple sweetened cranberries. EXTRAS. *Dark Chocolate: Ensure the dark chcocolate you use is suitablle for your diet.
