I picked lots of dill and a little bit of mint and parsley from my garden this week! I have so much dill that even with making salmon patties, adding dill to salads, and giving some away, I still have extra that I'm drying in my food dehydrator right now!

Since there are lots of wonderful fresh herbs available right now, I thought it fitting to share an article a wrote a few years ago about the health benefits of herbs. If you really want to take your eating to the next level, you want to include not only lots of vegetables, but make your meals more delicious and healthier by using a variety of herbs too! Do you have any favorite uses for dill, mint, or parsley? If so, please share!
