Tigelle (pronunciation ti-je-le) and Tigelliera | Mama Isa's Cooking School

Small little round breads baked on the fire in a traditional tigelliera (pan). They are fragrant and delicious eaten with "concia" (lard, rosemary and parmigiano reggiano cheese, also called pesto modenese) or accompanied by traditional cured meats or mozzarella and tomatoes.

I am very happy because I have a job where I can interact with lots of people.

I am a cooking class instructor and it is easy to make new friends!

I am constantly cooking, teaching, trying new things, experimenting with new combinations of food, beverage, and music because each one of my cooking courses looks at a different aspect of Italian Regional Food. 

I am extremely lucky because there is nothing that I dislike about my job. I get to keep my hand in food and cooking, share my love of teaching, and still meet new people. I never have to limit myself. 

Cook at home, for friends, for guests, experiment, and have fun! For me, cooking, being a chef and now a cooking class instructor, it’s all about being creative; experimenting; exploring foods and beverages; anything that could enhance the experience of dining and of teaching. For me it’s the joy I get when serving something I made to others. 

My motto: "Learn, experiment and don’t ever lose that joy that food and teaching can bring!".
