Today Sfincione Cooking Class at Mama Isa's Cooking School. Sfincione is a thick focaccia (usually a rectangular focaccia, but today I am teaching how to make a sfincione with a disk shape), topped with a sauce - made with tomatoes and red onions -, a few anchovies, pecorino cheese freshly grated and  special caciocavallo cheese, seasoned with a dash of fry breadcrumbs and oregano. 
Sfincione was born in Palermo – the capital of Sicily. In Palermitan dialect it means "thick sponge".

With a spongy crust up to about two centimetres thick, sfincione is more like focaccia than pizza – which of course in Italy has a thin crust. 
The sfincione has been made since the 17th century. The real flavour of sfincione comes from the onions, sautéed in extra virgin olive oil.

In Palermo sfincione is a street food. It is sold by a “sfinciunaro” (= the street vendor). It is a traditional dish on Christmas Eve, New Year's Eve and Good Friday, but it is delicious all the year. In summer it is served at room temperature.

Egg Raviolo at +Mama Isa's Cooking Classes near Venice Italy At work! Having fun making Raviolo with Egg Yolk and Butter & Sage Sauce.
Each of these enormous egg yolk ravioli contains a soft egg yolk perched atop a rich spinach-ricotta filling. 
When you cut it open, it oozes into one delicious bite after another.

Today Pizza fritta is a Neapolitan specialty with a long tradition. Instead of being baked, the pizza dough is deep fried in very hot oil and served with pizza sauce, fresh mozzarella cheese, Parmigiano Reggiano cheese, and basil leaves.

My secret is my mother's recipe for "pizza fritta" also called "montanara".
