Japanese traditional dish, Sansai Soba

A set of mountain wild vegetables known as sansai have been used for a long time in the Japanese Buddhist vegetarian cuisine. In the modern era some of them arenโ€™t wild anymore, being cultivated, and can be bought precooked in water.

However, you can still find restaurants selling traditional recipes based on them, like this delicious Sansai Soba I found and tasted at a restaurant in Yamadera.
