A healthy staple in our family: anything green soup. Braise one chopped onion until translucent. Add 2/3 to 1 lb steamed greens of you choice (spinach, swiss chard, zucchini). Do add only one species of veggies though. Sprinkle with 1 teaspoon starch and blend. Add enough water or stock to obtain a creamy consistency. Top with toasted bread rubbed with fresh garlic, a drizzle of good quality olive oil and a sprinkle of grated Parmesan or Pecorino.
