I have just been watching the post on laminated dough, but I think there is an error in the recipe?
70g yeast?!! for about 500g flour? even the 3 tbsp also listed seems rather a lot.http://les-madeleines.com/blog/?p=362

@bonapp "Will Wait For Food" dishes on the best food worthy of long lines. How about the #kouingaman? http://ow.ly/p3Qt7
At Bon Appétit, we generally hate long lines. But for these 5 delights, we're willing to make hours-long exceptions

Best bakery in town. Since they're closed on Sunday we're FORCED to try other bakeries, and they just don't stack up, although I will say Gourmandaise is pretty good. But I think anything on the menu here is worth a shot. I came with my family visiting out of town so we all got an item or two each and shared them. So I've had pretty much everything on their menu including the savory stuffed rolls they have. They do everything wonderfully, and delicately. Nothing super heavy here. You can't go wrong with just ordering a les madeleine on top of anything you've already ordered. It's like a thin crunchy cookie/cracker from the heavens. "No, we don't need to have sex tonight honey, I've already had Les Madeleines today."

Frank, this put a smile on my face. So glad you've enjoyed everything. Oh, and, uh, my apologies to your honey. ;)

Cold vibe, staff of 3 was huddled around a cell phone watching video or something=terrible customer service, ordered something and after paid had to remind them to give it to us. So it was real tasty, but also expensive and it's the service that will stop me from returning anytime soon

Been coming here for my pastry needs for many years—especially the Kouing-aman. Great atmosphere and location, even better eats.

The Kouing aman lived up to the hype. It is the stuff dreams are made of.

Kouing aman is like $5-$6 but worth every cent. This might be the only place that I go to by myself to enjoy a pastry and a London fog. Coffee is very good here too.

It's very expensive but the food is quite high-end quality. And their dessert specialty, Kouign-Amann, was very great.

I had the crepes, one with strawberry rhubarb jam, one with butter and sugar. Both were outstanding. Perfectly cooked and the jam was the perfect level of tartness and sweet. The mocha was not overly sweet like the big chain(s) like to make them. Certainly a place to keep on the short list in the Salt Lake City area for breakfast.
