I have just been watching the post on laminated dough, but I think there is an error in the recipe?
70g yeast?!! for about 500g flour? even the 3 tbsp also listed seems rather a lot.http://les-madeleines.com/blog/?p=362

At Bon Appétit, we generally hate long lines. But for these 5 delights, we're willing to make hours-long exceptions

Been coming here for my pastry needs for many years—especially the Kouing-aman. Great atmosphere and location, even better eats.

The Kouign-aman was seriously delicious. However, we also ordered the egg and cheese breakfast sandwich which was not. It was served on the equivalent of wheat wonder bread, which was a disappointment since we were at a bakery. Tillamook cheese and a plain egg, nothing good. We also waited 45 minutes for this sandwich after they gave our order to someone else, had to go ask about our order and start over. The Chai was okay. Had no water out and when they brought us some it tasted like bleach. Nice people, stick to the Kouign-aman.

I had the crepes, one with strawberry rhubarb jam, one with butter and sugar. Both were outstanding. Perfectly cooked and the jam was the perfect level of tartness and sweet. The mocha was not overly sweet like the big chain(s) like to make them. Certainly a place to keep on the short list in the Salt Lake City area for breakfast.

Pretty good lettuce wraps, I'd suggest them. They have a downtime on Fridays when they don't serve lunch or breakfast, only pastries and lettuce wraps.

Having no immediate direction upon my arrival to Utah, my friend insisted we stop at Les Madeleines for some breakfast-time pastries & coffee. Their most well-known menu item is the Kouing Aman - crisp and caramel-y outside, deliciously doughy/gooey on the inside. At about $4, this small treat doesn't come cheap, but it's mighty good, and definitely worth a taste! They've got a plethora of other food selections ranging from sandwiches to scones, and a healthy assortment of coffees, teas, and sodas. As with the aforementioned Kouing Aman, this gourmet bakery/luncheonette is a bit pricey, but everything we tried was definitely worth it.
