I have just been watching the post on laminated dough, but I think there is an error in the recipe? 
70g yeast?!! for about 500g flour? even the 3 tbsp also listed seems rather a lot.http://les-madeleines.com/blog/?p=362

I've been to SLC 3 times now and every time I have to come here to have a KA. They are worth the trip. I've had a kouign amann in NYC and SF and this beats both hands down. I even like these better than the famous DKA ones made by the Cronut man himself (Dominique Ansel). Gasp! I know blasphemous! Well this blasphemer like Les Madeleines better. Had the KA bread pudding too. It's excellent but still pales in comparison to the fresh KA.

Les Madeleines is the source of office treats at our law firm on a fairly regular basis. Whenever Michael Van comes to town from our Las Vegas office he stops by to get us a few things (he is a big fan of most things French). All of the products are of the highest quality and the results are great. If you live in Salt Lake City or are just visiting stop by Les Medeleines for a quick treat. If you have $5 and just want to choose one thing then go with what they are famous for; it is worth it!

Michael Van spends a lot of money at Les Madeleines almost every time he comes to town and I benefit from his need to do so. There are things that you can get here that are simply better than anything that you have ever eaten from the same class anywhere in the world. You pay a lot for what they sell but it is very good and very pretty so you can impress those around you. If you don't like butter then you will certainly not be interested in most of what is sold at Les Madeleines.

This is a great little pastry shop. They have in side and out side seating. The hot chocolate is excellent but not Chocolat Chaud as the French do it. Give it a try!

As I was on a mission to find some authentic french macaroons in SLC I came across Les Madeleine's. After browsing their site I noticed everyone talking about their Kouing Aman. So we went there for some breakfast and coffee. I ordered the Lavender Lemonade which was so refreshing and the Kouing Aman and although it was pricey (5.50) it was well worth it. I have never had such an amazing pastry, salty, sweet, flaky, gooey, all in one. My partner ordered the ham and cheese sandwich (both of us under the assumption it was more of a breakfast item) and their Madeleine mocha. The coffee wasn't the best and the sandwich was not good AT ALL. It was plain cold cheese and ham on tasteless bread, it reminded me of the sandwiches you feed to children in preschool. After eating such amazing pastries I was surprised how bland the sandwich was. I guess next time we will have to try something else and give the rest of their menu a fighting chance. But, if it wasn't for the Kouing Aman and delicious lemonade I don't know if I would consider coming back.

The things we tasted were really good. Kouing Aman was amazing, would have been better warm, but was still dreamy. Everything was very spendy. Worth to try at least once.
