? Here’s the recipe!
500 gr (16 oz.) cherry tomatoes
250 gr (10 oz.) finely chopped onions
30 Fresh peppermint leaves
Flour (as much as needed to make a smooth batter)
Olive oil to fry the fritters
Coarsely chop the cherry tomatoes and mix in a bowl with the onion, finely chopped mint, salt and pepper
Squish with hands to make a mash
Refrigerate for half an hour to tie the flavors together
Add just enough flour to hold batter together
Drop by spoonfuls into hot olive oil
Fry until they get color and become crunchy.
