Spinach Feta "Pizza" on French Bread Crust #fridayfoodie  

(adapted from Moosewood Restaurant Cooks at Home)

This has been a favourite of mine for about 20 years, and it's perfect for Friday night because it's so fast and simple and delicious. 

Ingredients

1 loaf french bread
10 oz fresh spinach (a largish bunch), coarsely chopped
1 Tbsp olive oil
1/2 C chopped scallions (red onion works really well, too)
1 tsp dried dill (or 1 Tbsp fresh)
1 C crumbled feta cheese
1 C ricotta cheese (cottage cheese subs nicely here)
ground black pepper to taste
2 tomatoes, thinly sliced

1. Preheat the oven to 300 F. 

2. Saute the spinach in oil until wilted, just a couple of minutes. Transfer to a colander and press out the excess moisture with a spoon.

3. Mix together the spinach, onions, dill, and cheeses in a bowl. Add pepper to taste.

4. Slice the bread loaf lengthwise. Spread the mixture evenly over each half. Arrange the sliced tomatoes on top. 

5. Bake in the oven until done, oh, about 10 minutes? Keep an eye on it and take it out when the topping gets melty and the bread starts to brown around the edges.

Serves 4.

Up for adoption in Edmonton/Leduc/Devon!

A quirky and cute tabby who became a "community cat" - looked after by caring neighbours - since last winter's last, brutal cold snap. If you were taking a walk down our street, chances are this guy would be following close behind, hoping for a chance to get some pets. He is an extremely lovable, non-dominant, lap-loving male who thinks the best thing ever (except for petting) is rolling around on a carpet with a catnip toy in his jaws.

On Netflix! Anyone who loves Canada should watch this documentary about Canada from 1969. It's fascinating and actually pretty funny, too. A view from a helicopter of the ten Canadian provinces in 1966. The result is a big, beautiful and engrossing bird's-eye portrait of the country.

Thank you, Old Iron Horse, for taking good care of a couple of hungry, desperate, VEGETARIAN out-of-towners on April 24! We stopped into several restaurants to ask about vegetarian options and this was the only one that offered (without being asked) to make adjustments to their existing dishes. This in itself impressed us, but we were also happy to see a baked tofu burger on the menu, which we ordered. It wasn't gourmet food by any stretch, but it was simple, tasty and a nice retreat from the usual veggie burger (and very possibly the closest thing to one you will find in a Ponoka restaurant). Also: friendly and fast service! We will definitely stop in again.
