"Lovely hotel but outstanding service from Concierge Manager, Patrick. He was a wealth of information in Santa Fa and told great stories about his legendary cousin, Leroy Petry. This guy is a credit to the hotel."

"We really loved our stay at the La Fonda. It’s a historic hotel located in the heart of Santa Fe and full of museum quality artwork. The rooms are beautiful and decorated in period furnishings, some with balconies and a fireplace. The staff is first class and shops and restaurants in the hotel definitely add to a truly wonderful experience. This is a treasure worth visiting ."

Chef Lane proves that gourmet food can be good to your waistline as well as your taste buds. The fish tartare is best served chilled, not at room temperature. And, because the fish isn’t cooked make sure you get the freshest, best quality you can. You can also make this dish with bass, mackerel or salmon instead of tuna.

INGREDIENTS
16 ounces Ahi Tuna, small diced, keep ice cold
2 green onions, thinly sliced
1 teaspoon serrano chile, minced
2 ounces avocado, diced small
1 Tablespoon cilantro, chopped
1 teaspoon fresh ginger, grated and chopped
1 Tablespoon honey
2 ounces soy sauce
1 ounce lime juice, fresh
1 ounce sesame oil
2 Tablespoons black and white sesame seeds, toasted

Toss all ingredients together, keep cold and serve in the next 3-hours or so. Chef recommends serving it immediately.
For the dressing:
½ Cup Soy Sauce
2 Tablespoon rice vinegar
1 Tablespoon Sambal Oelek ground chile paste (Can be purchased in the Asian section of the grocery store)
1 Tablespoon honey
1 teaspoon fresh ginger
1 teaspoon black and white sesame seeds, toasted
Mix all ingredients and spoon over and around tuna tartare or keep on the side
Serve with crisp wonton chips.

"What better place to celebrate our 50th wedding anniversary than at La Fonda on the Plaza - one of our very favorite hotels. We had no idea when we booked our room, weeks in advance, that the night of our anniversary was also the annual Zozobra celebration. Fortunately for us, the hotel arranged a private showing of the event in one of their ballrooms, so that we didn’t have to battle the crowds on the Plaza. We visited the Bell Tower for happy hour almost every night of the five nights we were there. Perfect place for watching the amazing sunsets. The rooms are just outstanding with their original art and appointments, i.e. 2 shower heads, Nespresso coffee maker, a balcony overlooking the church, extremely comfortable beds, and on and on. On-site parking is so easy to use, as well. A big bonus since parking is so difficult downtown. Location near the Square is so great with all the performances, etc. just a short walk away. Location is also a short walk from Santa Fe’s best dining. And to top things off, the management recognized our special day in a very special way."
