We love a holiday in Sri Lanka

There is many things to love about living and working in Sri Lanka, one of them is the many public holidays, usually not a month goes by without one, this month we are lucky to have three!

A lazy start after a late night webinar with a brunch of baked peppers & tomatoes and the best thing is, the third holiday of the month is tomorrow! Happy days...

Baked Peppers

Heat the oven to 180degrees
Carefully cut the peppers in 2, remove the seeds and place in a casserole dish. 
Fry up some veg you have a available in the fridge - mushrooms, onions, courgettes etc... add bacon in you like and some salt and pepper.
Put one spoonful in each pepper (depending on the size of your pepper of course, mine are organic and pretty small!)
Crack open the eggs into a jug, lightly whisk then pour the egg mix into the peppers.
Put the lid on the casserole dish (or foil if you haven't got a lid) and place in the oven for 30-40 mins.
Serve with some baked tomatoes (put in the oven 20 minutes after the peppers)
