Glazed Donuts / Authentic PA Dutch Potato-Based Fausnaughts!

Guess what tomorrow is?! I’m not much of a holiday person in general, which is kind of sad for a Pastry Chef who gets the most work on holidays. There is however one holiday I have celebrated with a passion each and every year – FAT TUESDAY!! It’s the one day of the year I consider it shameful to not shove donuts into your face. And then once you’re done, you can dress up and paint yourself as ridiculous as you imagine, cover yourself in beads, and go out to celebrate Mardi Gras! In my mind, Fat Tuesday / Mardi Gras trumps Christmas, Thanksgiving, and any other holiday you can throw at me .. except maybe Halloween – that would be a tough matchup.

Anyway, I was raised in Pennsylvania, in the Dutch country, and in PA Fat Tuesday is known as Fausnaught day. Fausnaughts are basically glazed donuts. However, the key to making these authentic PA Dutch Fausnaughts is they are made with POTATOES! I know it sounds weird, but if I wasn’t giving you the recipe, and I was just serving these up, you would never guess that’s the secret ingredient. They are wonderful!
