Spelt Tagliatelle with Trevisana salad & red beet

The recipe
Ingredients for 3 people
1 package of noodles spelled
otherwise: 200 g spelled flour
30 grams of semolina flour
2 eggs
1 head of a great red chicory (Trevisana salad)
20 cc of white wine
1 package of julienned red beets
1 pair of tablespoons of finely chopped onion, fine
250 cc of fresh cream
extra virgin olive oil, salt and pepper to taste
Process
Mix the two flours, add the beaten eggs and mix lightly. Form a ball, wrap with plastic film and let it rest for 30 minutes, after which you will be pulling the dough with a rolling pin and form  the noodles at the desired width.
In a pan heat a little oil and brown the onion, slowly, slowly. Wash the Trevisana  without dividing it and then cut it into julienne. Add it directly to the fried onion, salt immediately and cover with lid for 3 minutes. Uncovered, stir and pour white wine. Let it evaporate and add the cream. Let it thicken a little, than  pepper and adjust it again with a pinch of salt, after taste.
Dropped the pasta in a pot of lightly salted boiling water. Bake for 5 minutes and drain passing it directly into the sauce; mix it well and on demand join a sprinkling of Parmesan cheese (optional). Serve the pasta and add a bunch of beets - julienned strips-  which will give a sweet and crunchy tone to the dish. Serve immediately and .....
