Pork and Chicken Paella (Arroz con Pollo y Presa Iberica)
Ingredients for 8 people:
1 Kg of Bomba Rice
2.5L of Chicken Stock
2 Cloves of Garlic
3 very small onions, about 100g (Optional).
3 big Bell Peppers (Red/Green mixed)
500g Green Beans
700g of Pork (fatty meat like shoulder or ribs without bones)
800g of deboned Chicken legs and thighs
3 Ñoras (or a Paella mix powder)
4 tablespoons of salt
1 spoon of Safran
1 pinch of rosemary
I use a big Paella pan for 12-14 people to cook paella for 8, the bigger the pan the thinner the layer of rice, the best it tastes ;)
