Recipe Transcript:
To make apple haystacks, we're going to shred fresh apples and pair them with raisins, gluten-free pretzels and peanut butter. Preheat your oven to 350 degrees Fahrenheit.
Prepare a baking sheet by lining it with parchment paper. I've just washed 1 large apple and cut it into thin strips with the peel still attached. Place these apple strips into a bowl filled with cold water and one tablespoon lemon juice to keep them from browning. Before we use we're going to drain the apples well.
In a small pot on the stove top I've just gently warmed one cup of crunchy peanut butter. When it begins to thin stir in 2 tablespoons pure maple syrup and 2 tablespoons gfJules Gluten Free All Purpose Flour.
Continue by stirring in 1/2 cup gluten-free or regular pretzel sticks. Add 1/4 cup raisins and those drained apple strips.
Compact and spoon scoops of the mixture onto the parchment lined baking sheet.
If you are serving the dessert with a fork the scoops can be larger. If you are making these for bite size treats spoon small scoops onto the tray instead.
This recipe makes about 20 small haystacks or 10 larger ones. Bake for 20 minutes and remove to cool. Once they're cooked they are no longer so fragile and it's easy to eat them with a fork or as bit sized treats.
