Fried catfish, with mashed sweet potatoes and wilted collard greens. Served with tartar sauce.

This catfish was incredible used bobs red mill pancake mix mixed with a spice blend. The tartar sauce was great. My takeaways were, make fresh tartar sauce, use small sweet potatos and find out where they bought those collard greens. I have never seen such a good looking green.

Orange glazed meatballs
bok choy and Brown rice

The ponzu orange sauce and the rice were very good. The meatballs were not great, but I poorly modified them to gluten free. The Bok Choy was not great. Extremely dirty vegetables, poor cooking method.

This meal was also bad because it took so long to make. Well over an hour. Lots of vegetable cutting and meatball shaping.

The Orange Ponzu sauce with scallions and garlic was the takaway from this. Nothing here was good alone, everything was great with the sauce.

Tuna Melt GF style

These are corn tortillas cooked in a pannini press. Chedar, sweet pickles, tuna, chorico and sirracha mustard. The trick is to cook the tortilas, cook the chorico, and melt the cheese. Then add cold tuna and pickles.

My own creation tonight

Rotisserie Beef Shoulder
Sauted onions and mushrooms
Brussels sprouts gratin

The BS gratin was unbelievable. Roasted Brussels sprouts, aged Irish cheddar and a GF roux. I could have eaten just that all night.

I used "Bob's Red Mill" pancake mix as the flour,.Its a blend (mostly potato starch, sorghum and tapioca). I was trying blends because none of the single flours work. 

And yes Tresi, I can eat dairy, I had a condition known as "bacterial overgrowth" and when I ate certain foods thise nasty bacteria would go crazy. So I took some hardcore extremely expensive antibiotics and boom, I can eat dairy.
