Blueberry Cheesecake

·         200g Shortbread biscuits
·         60g soft butter (3 tbsp)
·         2 tsp lemon butter
·         500g mascarpone (cold from the fridge)
·         350g sweet condensed milk
·         3 tablespoon of lemon juice (freshly squeezed)
·         Lemon rind of 1 lemon
·         500g blueberries
·         a handful of mint leaves to garnish

1. Put the biscuits into your food processor and blend until it becomes a fine powder.
2. Add butter and the lemon butter, rub butter in powder so that it spreads moisture evenly through the crumbs. Keep about a handful aside - this will be used for decoration.
3. On the bottom of a high rimmed (28cm) baking tin empty the remainder of your crumble mixture. Spread an even layer across the base of the tin. Place in the fridge for half an hour.
4.  In the meantime, in a bowl mixer stir mascarpone with condensed milk and lemon rind. Add lemon juice and stir this into the mix.
5. Add 3/4 of the blueberries to the mixture and fold through.
6. Remove the baking tin from the fridge and pour the mascarpone mixture on top of the crumb base.
7. Tap the tin a couple of times on your bench top to ensure there are no air gaps in the mix.
8. Garnish with remaining Blueberries, mint leaves and sprinkle with the crumb mixture.
9. Place in the fridge for 2 or 3 hours to set.
10. Remove from the baking tin, slice and enjoy!
