I'm glad it was a good day for you also.
It was a good day here too. 
The kids coloured many eggs when Mari and Juliet came home with the rest from the city.
We hid chocolate and candy eggs today outside, and tomorrow they will hide the coloured eggs in the yard.
We have a big yard, about an acre.
Lamb sounds excellent.
I pounded the badminton posts back in and re-hung the net, fun to ensue.
All in all a very relaxing day.

+Ron Miller yeah, most of us are a combo of giver and taker.
But one does run into some people that are a clearer majority giver or taker. 
Some hide their tendencies well, both giving and taking.
I love it when I run into takers who make a break sometimes and give like hell.
The same can be said for the givers who really need to step out and stand up for themselves sometimes.
Giving can be as much of a defense as anything.
Some days people astonish me, other days not so much.

Accompanied by jasmine rice.
It was very good!
The kidlets ate every last speck of food.

Carrot Cake with Coconut and Brown Butter Pineapple Rum Cream Cheese Frosting

I was inspired after some serious smack--talk between +Dirk Reul  and myself regarding the proper composition of Carrot Cake and why it can be such a tricky enterprise.  I figured since I was so judgey about it, I should probably put the cake where my mouth is (that's totally the way that saying goes, right?) I think he has learned that carrot cake is not only an acquired taste, but, not as easy to execute (especially with nothing to reference it from). I was influenced by the following recipe, but I made my own changes to the actual ingredients and amounts.  I still followed the directions almost to the letter, but rather than using a blender, I used my mixer.


Ingredients (Cake):
3/4lb of carrots, peeled and finely grated (about 7 medium carrots)
8 oz. can pineapple tidbits or crushed, drained
¼ C chopped walnuts
⅓ C raisins
2 C  unbleached all purpose flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/8 tsp clove or allspice
1/2 C brown sugar
1/2 C granulated sugar
3 large eggs
1/2 C (4 oz.) unsalted butter, melted and cooled
1/2 C safflower oil
1 TBSP of Pineapple Rum

Pineapple Rum Cream Cheese Frosting:
4 oz cream cheese
1 stick of butter
2 ½ cups of powdered sugar
2 ½ TBSP Pineapple Rum.

Outside crumble:  
a full bag of flaked coconut
1 cup of chopped walnuts.  
Spread over a baking sheet and bake at 300F until lightly browned.

NOTE:  Crushed Pineapple:  This can hold quite a bit of moisture, and although that is a good thing, it might be a bit much depending if you are able to find the fruit in a finely shredded form.  I doubled up a few paper towels and dumped the contents of my opened can into the middle.  I then wrapped it up and squeezed it gently over my sink until it stopped dripping.

I used a 9inch pan.   I am of the opinion that the frosting should be increased in volume by about 25-50% in order to fully cover the cake and allow enough “glue” for the crumble.




Ringing, rousing, overwhelming success!!!

There are not words for this.  There aren't.  The cake part, was not too moist (as it was feared) nor dry.  Perfectly fluffy, mild in sweetness and not too heavy (as these things are wont to go). 

But the real clincher here, the thing that made this cake what it is, THE FROSTING!

This is by far the best frosting I have ever had in my ever.  Yes, its cream cheese frosting, but, its not heavy.  The brown butter with the added kick of the rum really balance it.  Combined with the cake, well, there are several people in this house tonight making obscene noises.

Trekkie since the seventies, when I walked over to my grandma's house to try to watch Star Trek, they had a rotor on their antenna, we did not.
I love to play chess. Learned it from a beloved English elementary school Principal. 
I also learned a love of science, astronomy, and geology from him as well.
In my junior high years on Wednesday night we would play chess and drink many cups of tea with sugar and milk. We talked about every topic under the sun, with his dear wife Mary watching and knitting. 

Spent years with Christian stuff, on and off church boards, leading Bible studies, running ALPHA Courses, reading everything on all religious stuff Xtian or non Xtian.  
Taught myself guitar, then spent a bunch of years playing guitar in Worship teams.
Wound up as leader of Music for a year and de facto in charge person for five months. 
Much great times during that year, much less than happy stuff as well.

I had been on a long journey clarifying what I believed or knew to be true. 
My love of science and rational thought finally forced me to accept the questions that no faith can answer.

I could no longer accept the baloney I was formerly selling.

Lovely falls, easy to access, not too far off the highway. It's fenced off, but you can just walk round it. Be careful! The algae on the rocks is very slippery. Quite photogenic scenery.
