Simple, subtle, mellow, light, and refined. These are just a few terms when describing the best thing to come out of North Korea: Naengmyeon 냉면 (Cold Noodles). Thanks to Graham Holliday, author of just-published Eating Korea, some extra research led me to two of the more popular restaurants serving Pyongyang-style naengmyeon. This version is entirely different and takes some getting used to compared to the spicier, richer iterations that most people are accustomed to. But, after several attempts, you begin to understand why some people favor this delicate dish that focuses more on ingredients, primarily buckwheat and beef broth, over artificial flavors.
