Some fairly simple tacos de lengua (beef tongue) made sous vide from a recipe at +Serious Eats. You put the beef tongue in a bag with tomato, onion, cilantro, and duck fat then sous vide for 24-48 hours (at 170 degrees F). This gives you a nice base for a salsa to serve with the tacos. A good use of a sous vide setup though you could braise the beef tongue (for six hours) in a pinch.

A sous-vide preparation of a pork chop, dry rubbed and covered in homemade bbq sauce, from +J. Kenji Lopez-Alt at +Serious Eats  which I then paired with collards with bacon from +Elise Bauer.

Making chicken wings the Modernist Cuisine at Home way. In the water bath at 148 °F for 1 hour then fried in peanut oil at 400 °F. I let them air dry in the fridge overnight in between the sous vide step and frying to help crisp the skin. Sauced the traditional way with a stick of butter and a cup of Frank's Red Hot.

Recently made this Charred Corn and Cherry Tomato salad from the folks at +Serious Eats. It's a good way to make use of the late August bounty still available at farmers' markets. Note that it calls for things like cotija cheese so you likely need another trip to the regular market.

New Potatoes are the BEST, but they spoil as quickly as any other farmers' market produce... so cook them ASAP, but cook them simply.
