If the thing to be defined is a specific type of Thing found in the schemas, then of course a definition of the Thing can readily be marked up using the name and description properties. This will work for anything that's the subject of a single resource (i.e. a web page representing or about the item), but is more problematic for a list of definitions, although linked lists can be structured using the CollectionPage type and isPartOf property.
I don't quite understand your conundrum : any Offer, Product or Demand be declared with an itemCondition property. That these declarations may or may not be elegantly supported by the HTML tags you're using shouldn't determine whether or not you can mark those declarations up. If your challenge is to relate properties that aren't direct descendants of an item then itemref can come to your aid there.
