Are you looking for a #MeatlessMonday recipe? Try this Pumpkin Mac and Cheese from Katalyst Health. It's gluten free!
INGREDIENTS
For the sauce
2 cups canned pumpkin
1 cup almond milk
1 1/2 cups cheddar cheese
2 tablespoons grass fed butter
1/2 teaspoon garlic powder
1 teaspoon sea salt
1/2 teaspoon pepper
For the pasta
2 cups gluten-free pasta shells
1 cup reserved pasta water
DIRECTIONS
For the sauce
Put all ingredients into a large pot Bring to a simmer, stirring frequently Simmer on medium to low until all of the cheese is melted and sauce is thick and creamy
For the pasta
Boil the pasta as per box direction Remove 1 cup of pasta water, then drain remaining water Place the 1 cup of pasta water, cooked pasta shells, and 1 1/2 cups of cheese sauce into a large pot or bowl Stir until shells are coated Sprinkle with extra pepper if desired, then serve!
