Oh my good gosh!
I just bought two small (1 person) size heads of cauliflower at yesterdays farmers market. I was gonna chop them up and roast them per usual. This recipe looks amazingly delicious!
I'm so glad I found this post, and even happier now that I circled you.

I was so amazed at how much I liked roast cauliflower the first time I tried it. It's so good! Of course, I put it on noodles, so that was kind of cheating.

How can you not like cauliflowers, Marta? -it has no flavor. It's more like a flavor sponge (like tofu). You can make it into anything you want. I personally like it in pakistani curry dishes. Spices!

I can't believe how easy this was to make! The only change I would make is to break apart the cauliflower before pouring the sauce over top...so that there is more flavor throughout (and not just on top of the cauliflower). Thanks for sharing!
 
Mmmm...we discovered roasted cauliflower when I had to be ultra-low-carb for fertility treatment blood-sugar management several years ago. Ours is ultra-basic: we buy frozen cauliflower at HEB, thaw it briefly in the microwave, toss with EVOO, salt, garlic powder, and onion powder, and then roast on a foil-lined cookie sheet alongside whatever meat we're cooking. Nom-friggin-tastic, and none of that weird stink you get from boiling it. We haven't tried a whole head before...thanks for the inspiration! :D
