The gong bao ji ding (宫堡鸡丁 spelling?) from the XXKX restaurant on Nantai Island in Fuzhou.
 
I do love good Chinese food. Sadly, we're a bit lacking in good places to get it.

Szechuan (not sure of the correct spelling) food is probably my favourite though!
 
That's the old-fashioned way of transliterating Sichuan. Ironically, where I live at the moment has a plethora of Sichuan restaurants, though it's not without its local cuisine.
