Risotto al lampredotto con salsa verde, it doesn't get any better than this!

I used a brown Carnaroli rice, probably the most precious of Italian rices, often referred to as the king of rices. In this game the king of rices is playing with one of the main ingredients of the Florentine cucina povera, lampredotto.

As in the iconic panino, the salsa verde has a fundamental role. Add it just before serving along with a generous dusting of black pepper, roughly crushed in a mortar, or use it, as unusual ingredient, to your cream risotto and make it even more Florentine.

Summer awareness and ricotta gnocchi
The best seasonal fresh herbs shine through these ricotta gnocchi: mint, basil and lemon balm add a fresh and green note enhanced by a bouquet of zucchini blossoms used an unusual seasoning.
It’s like biting into an early summer evening, like a restoring nap among bushes of fresh herbs in the shade of a quiet garden.

Mediterranean chicken salad with preserved lemons. My new obsession!
Lemons preserved in salt became my secret ingredient for a chicken salad to remember. Which is your secret ingredient?

The trick to have a fresh, tasty and memorable chicken salad is to marinate the chicken breast with capers, preserved lemons, parsley and olive oil.
