Kilchoman Red Wine Finish Single Cask for The Nectar

The #Kilchoman #redwine finish Cask 171/2011 is an exceptionally beautiful #singlecask. It’s selected by and bottled for @thenectarbelgium. This bottling at 56.7% with a #peat content of 35 ppm underwent a maturation of 7 years on #bourbonbarrels. Afterwards, it got a finish of 5 months on #redwinebarrels 🍷 from the #Portuguese #Douro valley. Only 246 bottles available!

As with all of the Kilchoman range, the Red Wine Cask Finish Single Cask for the Nectar is full of peat. Non chill filtered, this particular release has a natural coppery red colour. This because of the extraction from the #oak casks. This expression is at 56.7% ABV, so stronger than the typical 46% ABV. This is done because the higher bottling strength adds structure and intensity to the #dram.

Tasting Notes

On the nose, this red wine finish envelops a richly #peatysmoke with buttery #caramel and stewed fruit. On the taste, it develops into a sweet and round dram, with #chocolate, #licorice and peat. This #whisky finishes with a long and complex taste. This in combination with hints of stone fruit and maritime peat smoke. Cheers!

KI NO TEA is the exclusive product in collaboration with #tea-grower and blender, #Hori-Shichimeien. This blender knows its origin in the Meiji era in 1879. Now, they’re in the famous #Uji region to the south of Kyoto city. That’s where a number if super-premium Uji teas form the heart of #KINOTEA. Tencha and Gyokuro provide intense aromas and depth of flavour. This is in combination with a wonderful sweetness that occurs naturally in the distillation of these superior teas.

Kilchoman 100% Islay Single Malt Whisky – 8th Edition

The latest instalment of the #Kilchoman 100% #Islay range, in limited runs annually, is the only expression distilled solely from #barley grown and malted at the distillery. This 8th Edition is a vatting of 23 #bourbonbarrels and 7 #olorososherry butts. The latter were filled between 2008 and 2012, bottled at 50% ABV. A total of 12,000 bottles are available worldwide. 🌍

The 8th Edition can trace its origins to the fertile soil of the @kilchomansinglemalt barley fields. It was there that they harvested #Opticbarley between 2007 and 2011. Once harvested the barley was hand malted, #peated and distilled before being matured in a combination of #bourbon and #sherry casks. The combination of cask types allowing for an elegant balance of rich #spices, #citrus #sweetness and earthy #peatsmoke. Bottled on site, the 100% Islay 8th Edition is without colouring or chill-filtration, standing alone as Islay’s only Single Farm #SingleMalt, 100% Islay – from barley to bottle.

Though the name might suggest a heavier peating level than the standard 50 ppm offerings; #MachirBay, #Sanaig and others. However, the 100% Islay range has in fact a lower level of peat, roughly 20 ppm. Although this is not an exact measurement as the small batches and old-style techniques make it almost impossible to peat each batch to exactly the same level. The key difference between this and previous batches of the 100% Islay is the addition of sherry cask maturation. The seven oloroso sherry casks included in the vatting give the whisky added depth and richness compared to the fresh #fruits and #vanilla of previous editions.

Copenhagen Mexican Coffee – MC – Liqueur

The organic #coffeebeans used are a mix of two different roasts: a very light roast that lends a higher acidity, and a medium dark roast that catches slightly #bitter coffee notes. We combined the coffee distillate with cane sugar, green #anise and a touch of grated #organic #lemon peel for a #rich, bitter and slightly #sweet experience.

This #kyoto #drygin is inspired by tradition and distilled, blended and bottled in Kyoto,Japan. The innovation of the brand lies mostly in its #recipe and the production process. While no peculiar or exotic ingredients are being used. For this gin, we have seven different distillations with different #botanicals each, six in neutral #wheat and #barleyalcohol and one in water. In the first batch, #juniper is distilled, in the second #limes and in the third #kumquat. Next up is #lemons, then pink and green #grapefruits. Afterwards, #mandarins, #cardamom, #sweet and bitter #oranges. And as a last step, #lemongrass in water.

The last distillation of lemongrass in water or, to be more precise in vapor, is made exactly like the production of #roseblossom water. This is done in order to keep all its freshness. Due to this last distillation in water it loses its denomination as #LondonDry Gin. This because, according to legislation, all additions except for alcohol and sugar are forbidden.

The Ferdinand’s Saar Dry Gin 5y anniversary is a #GermanGin infused with #Riesling #grapes and distilled in limited numbers. In this way, the producers are sure to be able to create a high-quality #gin. Ánd it promises supreme drinking pleasure. Just by looking at the luxurious paper packaging makes you wonder about the bottle’s content.

The gin owes its name to the Royal Prussian District Forester Ferdinand Geltz. Since, he ensured that the family Zilliken could exercise viticulture for over 250 years in the Saarburger Rausch district. Dorothee is now the 11th generation of the family making wine. Along with master distiller Andreas Vallendar, she is responsible for this unique gin. Andreas wants to guarantee the #complexity and the specific character of this gin by distilling it in small batches. Moreover, he only uses local, homegrown ingredients. Next to the Riesling infusion, another thirty botanicals enter the pot still. All of them grown on the Zilliken estate.

This #Ferdinand’s #5y anniversary gin is only available in an amount of 3000 bottles worldwide. Belgium only got 120 bottles allocated, of which we have/had twelve. No worries, we still have some (!) left. 😉
The anniversary gin has an on home-grown red vineyard peach and lemon verbena. It comes in a porcelain bottle with direct print, and with a luxury black wrapping paper.

@plantation.rum #Peru 2004 hails from column stills at the Destilerías Unidas S.A. de Peru, in the #ChicamaValley, an extremely arid region on the Peruvian north coast. This Peru #vintage is first aged 12 years in its #terroir of origin and then matured two years in France. It reveals essences of ripe figs, both the fruit and the leaf, and mango, then develops notes of rich pastry, almond and white pepper. 🥃
