I had the same problem: Stuck on november 5. 8.1.0 after the beta program. Applying the Bullhead Rescue OTA fixed the problem.
My Nexus 5X is still on 8.1.0 Beta (Build number OPP6.171019.012)

I haven't got a OTA security Update since November 2017 and also no Update for the release Version of Android 8.1.


Now I thought it would help to un-enroll from the beta program, but when I visited the website it said:


Unfortunately, there are no eligible devices associated with this Google account


I have only one Google Account, so I'm pretty sure it is the same account on the phone and on the webpage.

When I reboot my phone I still get the beta message. That and the build number tells me that I am still in the beta program.


In December last year I did a factory reset. Maybe that has something to do with it?


But my main question is, how do I get out of the beta program now to get the release Version of Android?

UPDATE:

I have installed the OTA update according to the instructions. It was quick and very easy.

Now I'm on the January Security Update on release Version 8.1 and hopefully will get further security updates over the air again.
