Easy, 9-ingredient seeded whole grain bread

Ingredients:
- 1 ½ cups warm water
- ¾ Tbsp fast-acting yeast (1 packet yields ~¾ Tbsp or 2 ¼ tsp)
- 2 Tbsp maple syrup, agave, or honey if not vegan
- ½ tbsp salt
- 1 Tbsp flaxseed meal - http://bit.ly/2f9iyvs

- 1 ¾ cups all-purpose flour (plus more for rolling / dusting)
2 Tbsp raw or roasted sunflower seeds - http://bit.ly/2MijArB

Instructions:
1. Combine warm water (like bath water, or 110 degrees F / 43 C), yeast, maple syrup or sugar, salt, flax seed and flours in a large mixing bowl and stir. The result will be a sticky, rough dough. If using a stand mixer, beat at medium speed for about a minute. Otherwise just use a spoon to stir until well combined and when it can no longer do the job, knead and turn it in the bowl with your hands. Add flour until the dough is no longer sticking to the sides - about 3 ¾ cups total (amount as original recipe is written // adjust if altering batch size).
2. Lift the dough out and lightly grease the bowl with nonstick spray or olive oil. Cover and let rise for 2 hours at room temperature and 2 hours in the fridge. Alternatively, go straight for the fridge for two hours to save time, though a longer rise is best.
3. Use fingers to create a small hole in the dough and pour in sunflower seeds and oats. Transfer dough to a lightly floured work surface and knead about 20 turns or until elastic. Form into a loaf-like shape.
4. Place seam-side down in a lightly greased loaf pan or baking sheet and sift a light coating of flour over the top to help keep the dough moist. Loosely cover with plastic wrap and let rest for 45-60 minutes.
5. Preheat oven to 425 degrees F (218 C)* toward the end of the dough resting time and place a metal or cast iron pan (not glass, Pyrex, or ceramic) on the lowest oven rack. Also have 1 cup of hot water ready.
6. When the oven is preheated, slash the bread 2 or 3 times with a knife, making a cut about ½-inch deep.
7. Place in oven on middle rack. Then carefully pour hot water into the shallow pan on the rack beneath. Expect it to bubble and steam; then close oven door quickly.
8. Bake the bread for 26 to 35 minutes, or until deep golden brown and risen.
9. Remove the bread from the oven and let rest in the pan for 5 minutes. Then carefully remove from pan and transfer to a cooling rack to cool. Let it cool completely before slicing for best results (otherwise it can be doughy in the middle).
10. Store leftovers in a plastic bag at room temperature for up to a few days. Transfer to freezer for longer term storage.

#Vegan Strawberry Cream Cheese 🍓

INGREDIENTS:
- 28 grams dried strawberries, fresh will not work so don’t even attempt - http://bit.ly/2Cfp5n6
- 1/3 cup (85g) raw cashew butter - http://bit.ly/1EQwVg0
- 1/3 cup + 2 tablespoons (115g) non-dairy plain yogurt
- 1 teaspoon apple cider vinegar
- 2 teaspoons fresh lemon juice
- heaped 1/8 teaspoon fine sea salt (optional, but DOES improve the flavor)

Note: If you can’t find cashew butter, then you can make your own. I do it often. Just add 2 cups RAW, unsalted cashews to a food processor and process for about 10 minutes or so. You will need to scrape the sides down a few times during. Process until completely silky smooth, do not stop until it becomes almost pour-able like almond butter. It should have a texture similar to a buttercream frosting. Then just use 1/3 cup for the recipe.

INSTRUCTIONS:
1. Add all of the ingredients to a food processor and process until it gets wet and chunky. Scrape the sides and bottom well and process again for a couple of minutes or so until completely smooth and well mixed. I had to stop a couple of times to scrape.
2. Add to a container and chill for a couple of hours or overnight. You can eat it right away if you like, as it is yummy and thick, but it will have the classic firm cream cheese texture after it has chilled in the fridge for awhile. Not to mention, it tastes better when chilled and firm.

#Vegan Nutella Lovers Healthy Chocolate #Smoothie

Ingredients:

- 1 cup ripe pear, chopped with the skin on from 2 small or 1 large pear

- 1 ½ teaspoons vanilla extract
- 1 ½ cups coconut water
- 2 cups ice
- handful of seasonal fruit, as garnish

Instructions
Place all the ingredients in a blender and blend until smooth and frosty. Serve immediately.

Pineapple, Mango, Coconut & Cashew Nut #Vegan #Smoothie

Ingredients:
- 2 big handfuls of spinach
- 2 small handfuls frozen mango chunks
- 2 small handfuls fresh pineapple approx. two slices, skin chopped off and diced
- 2 small handfuls cashew nuts - http://bit.ly/2denk9z
- 1 medium banana peeled and cut in half
- 500 ml coconut milk
- Juice of 1 lime

Method:
Place all the ingredients into in a high speed blender or smoothie maker and whizz until smooth.
Pour into a glass and enjoy!!

#Vegan Dutch Baby with Caramelized Apples 🍎🍏🍎

Ingredients
• 2 tablespoon almond butter
• 1 tablespoon coconut oil
• 1 cup almond milk
• 2/3 cup oat flour
• 3 tablespoons coconut sugar
• 1/2 teaspoon nutmeg
• 1/2 teaspoon ground cinnamon
• Topping:
• 3 apples (sliced)
• 3 tablespoons granulated sugar
• 1/2 teaspoon ground cinnamon
• 1 tablespoons coconut oil
• Powdered sugar (for dusting)

Instructions
1. Preheat oven to 350 degrees F. Lightly grease a cast iron skillet and set aside.
2. To make the dutch baby batter, combine the almond butter, coconut oil, almond milk, flour, coconut sugar, nutmeg and cinnamon in a blender on medium high until smooth. Pour the batter into the greased cast iron skillet and bake for 25 to 30 minutes.
3. While the dutch baby is baking, prepare the topping. Heat a large skillet over medium high heat and melt the 1 tablespoons of coconut oil. When melted, add in the granulated sugar, apples and cinnamon. Saute until apples are tender, which will take about 10-15 minutes. Remove from heat and set aside until the dutch baby is done. Top the dutch baby and sprinkle with powdered sugar.
