I'LL BE TEACHING ANOTHER COOKING FOR DIGESTIVE HEALING CLASS this week on Thursday at 6:30 pm at Real Foods Market in Orem, UT. If you missed my last class you should come check this one out--I'll be focusing on how to make lactose-free, probiotic-rich yogurt and creme fraiche. These are serious superfoods with powerful healing properties that can allow you to enjoy dairy whether or not you are lactose-free!! This is gonna be a great chance to sample lots of easily digestible dairy recipes as well as see how easy it is to make your own yogurt and sour cream:)

P.S. even if you can't make it, this would also be a great chance to share this class with someone you know who wants to learn how to heal their bodies with food. The class is free so anyone is welcome! The more the merrier! So go ahead and spread the word:)

Healing your gut = no grains = no rice = no burritos....

This has been the bane of my existence.. UNTIL TODAY. Butternut squash mexican rice. I really think it's better than the original:) At least the dish I made was. Only problem is I ended up just throwing in the amount of spices I thought would be right without measuring. I got it dead right. Seasonings were perfect. And so I wrote down my best guess what I did haha You just put in how much you think you would like and go from there

Then, stuff a burrito.

(Also, you can sub the spinach for tomatoes.. I just had leftover spinach I needed to use. Worked great but tomatoes would definitely be more traditional. )

Don't expect a ton, there is literally just one video. But you gotta start somewhere right? Next in line is how to make homemade yogurt. Then sauerkraut. Then lactose-free ice cream. I'm getting more excited just thinking about it.

Also I think my absolute favorite part of this video is my horrendous hand tan line. That's what you get for wearing a t-shirt with biking gloves on a sunny day after months of snow.
