Recipe
Almond Amaretto Pound Cake

INGREDIENTS

1 cup whole milk
1 tablespoon white vinegar
3 cups all-purpose flour*
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
2 3/4 cup Extra Fine Granulated Sugar
4 large eggs
1 tablespoon vanilla extract
2 teaspoons almond extract
1/4 cup amaretto

Amaretto Sauce

1/2 cup (1 stick) unsalted butter
1/2 cup packed Light Brown Sugar
1/2 cup Extra Fine Granulated Sugar
1/3 cup half & half
3 tablespoons amaretto

*Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.

DIRECTIONS

Preheat oven to 325°F. Grease a 10-inch bundt pan with baking spray or butter and flour it. Set aside.
In small bowl, whisk together milk and vinegar. Set aside. In a medium bowl, whisk together flour, baking soda and salt. Set aside.
In large bowl of stand mixer, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla and almond until well combined. Beat in flour mixture alternating with milk and amaretto.
Pour batter into prepared bundt pan. Bake for 55 to 65 minutes, until center is set and a toothpick inserted comes out clean. Allow cake to cool completely (in bundt pan) before inverting onto cake plate.
Amaretto Sauce: Combine the butter, brown sugar and granulated sugar in a small saucepan. Heat over medium heat, stirring often, until smooth. Add the cream and amaretto and bring to a simmer. Simmer for 5 minutes, stirring often. Remove from heat and let cool for 10 minutes.
Serve pound cake warm drizzled with amaretto sauce.

SO-EASY LEMON BARS

Ingredients:
1 roll (16.5 oz) Pillsbury Create 'n Bake refrigerated sugar cookies
4 eggs, slightly beaten
1 1/2 cups granulated sugar
2 tablespoons all-purpose flour
2 tablespoons butter or margarine, softened
2 tablespoons grated lemon peel (2 medium)
1/3 cup fresh lemon juice (2 medium)
1 to 2 tablespoons powdered sugar

Ingredients:
1. Heat oven to 350°F. In ungreased 13x9-inch pan, break up cookie dough. With floured fingers, press dough evenly in bottom of pan to form crust. Bake 15 to 20 minutes or until light golden brown.
2. In large bowl, beat eggs with wire whisk or fork until well blended. Beat in granulated sugar, flour and butter until well blended. Stir in lemon peel and lemon juice. Pour mixture over warm crust.
3. Bake 20 to 30 minutes longer or until edges are light golden brown. Cool completely, about 30 minutes. Sprinkle with powdered sugar. With knife dipped in hot water, cut into 6 rows by 6 rows.

Almond Amaretto Pound Cake

INGREDIENTS

Recipe
YAYAs BANANA PUDDING

1 16oz bag vanilla wafers (divided)
5-6 bananas, sliced
2 cups whole milk
1 5oz box french vanilla instant pudding
1 8oz cream cheese, room temperature
1 14oz can sweetened condensed milk
1 12oz container whipped topping, thawed

Line bottom of 9x13-inch dish with half the vanilla wafers. Layer banana slices on top.

In a bowl, combine milk and pudding mix, blending well using a mixer.

In another bowl, combine cream cheese and sweetened condensed milk, then beat until smooth.

Fold whipped topping into cream cheese mixture. Add cream mixture to pudding mixture and stir well. Pour this mixture over cookies and bananas. Place the remaining vanilla wafers on top. Refrigerate 3-4 hours.

Wood carving, competition, and auction. Professional wood carvers from several states compete with chainsaws to create sculptures from their imagination of eagles, fish, bears, beautiful benches, and others. At the end of the second day, the pieces are judged for prize money and auctioned off with the proceeds going to the Eureka Springs Fire Department for equipment.

CHESS PIE

Ingredients

1/2 cup butter
2 cups white sugar
1 teaspoon vanilla extract
4 eggs
1 tablespoon cornmeal
1/4 cup evaporated milk
1 tablespoon distilled white vinegar
1 (9 inch) unbaked pie shell

Directions

Preheat the oven to 425 degrees F (220 degrees C).
In a large bowl, mix the butter, sugar and vanilla together. Mix in the eggs, then stir in the cornmeal, evaporated milk and vinegar until smooth.
Bake for 10 minutes in the preheated oven, then reduce heat to 300 degrees F (150 degrees C) for 40 minutes. Let cool. Cut and top servings with whipped cream. You will think you have died and gone to heaven.

Recipe

TIRAMISU TART

Crust
1 cup all-purpose flour
½ cup cold butter, cut into 1/8 inch slices
¼ cup powdered sugar

Chocolate Layer
1 bar (4 oz) bittersweet baking chocolate, coarsely chopped
2 teaspoons vegetable oil

Filling
½ cup granulated sugar
2 tablespoons all-purpose flour
1 cup whipping cream
1 tablespoon instant espresso coffee granules
1 egg
½ teaspoon vanilla

Topping
1 8 oz package cream cheese, softened
½ cup whipping cream
½ cup powdered sugar

Heat oven to 350ï‚°. In food processor, place crust ingredients; process until soft dough forms. Spread dough evenly with fingers on bottom and up side of ungreased 9 or 10 inch tart pan. Bake 12 to 15 minutes or until edge begins to brown. Cool 5 minutes.

In small bowl, reserve 3 tablespoonfuls of the chopped chocolate. In a 1-cup glass measuring cup, microwave remaining chocolate uncovered on High for about 45 seconds; stir until chocolate is melted. Stir in oil. Spread mixture over baked crust. Place in freezer to cool chocolate.

Meanwhile, in medium bowl, mix granulated sugar and 2 tablespoons flour, set aside. In a 2-cup liquid measuring cup, beat 1 cup whipping cream, the coffee granules, egg and vanilla with wire whisk until well blended. Beat cream mixture into sugar mixture until well blended. Pour over chocolate in pan.

Bake 35 to 40 minutes or until edge is golden brown and center is set. Cool completely on cooling rack, about 1 hour 30 minutes.

In a medium bowl, beat topping ingredients with electric mixer on medium speed about 2 minutes or until fluffy. Spread over top of cooled tart in pan. Sprinkle with reserved chopped chocolate. Remove side of pan before serving. Store covered in refrigerator.

PINEAPPLE PIE
(Johnny Cash's Mother's Recipe)

1 1/2 cup sugar
1/2 cup butter
1 cup crushed pineapple
3 tablespoons flour
1 teaspoon vanilla
2 eggs
1 unbaked pie shell

Beat all ingredients together.
Pour into pie shell.
Bake 50 minutes at 350 deg F until center is set and brown.

Don Gammie Turkey Trot
The 8th annual Don Gammie Turkey Trot is a 5k trail run and a 1 mile fun run/walk that is held in Lake Leatherwood City Park on Thanksgiving morning. All of the funds raised by this event go to the Grassy Knob Volunteer Fire Department!

Competitions will be held at incredible locations in Historic Downtown Eureka Springs. STOP SHAVING NOVEMBER 1st! Track your progress… have your photo taken at Chelsea’s on November 1st and show that you are the fastest beard grower in the US (or in town anyway).
This is a fundraiser for the Arkansas Prostate Cancer Foundation.

RECIPE
CRAZY BANANA CAKE

Ingredients
Cake:
1.5 cups very ripe bananas (3 fresh bananas or 4 thawed, previously frozen bananas)
2 tsp lemon juice
3 cups all-purpose flour
1.5 tsp baking soda
¼ tsp salt
¾ cup soft butter
2 cups sugar
3 eggs
2 tsp vanilla
1.5 cups buttermilk (OR milk soured with one tbsp vinegar or lemon juice)

Icing:
½ cup softened butter
8 oz cream cheese, room temp.
1 tsp vanilla
3.5 cups icing sugar (also known as powdered sugar or confectioner's sugar)

Instructions
1. Pre-heat oven to 275 F, and grease and flour (or spray), a 9x13 cake pan.
2. Mash banana and mix with lemon juice and set aside.
3. In a med bowl, mix flour, baking soda and salt. Set aside.
4. If you're making your own buttermilk, combine milk and vinegar (or lemon juice) in a small bowl, and set aside.
5. In a large bowl, cream butter and sugar.
6. Beat in eggs, one at a time. Stir in vanilla.
7. Beat in flour mixture alternately with buttermilk.
8. Stir in bananas.
9. Pour into cake pan and bake 1 hour and 10 mins (or until knife comes out clean). *if need be, cook longer, checking every 10 minutes until cake is fully cooked.
10. Immediately place in freezer for 45 minutes. (if not completely cool upon removal from freezer, let cool further before icing).
11. Cream butter and cream cheese.
12. Beat in vanilla and icing sugar on low until combined, then high until smooth.
13. Frost cake and enjoy!

RECIPE

KAHLUA FUDGE BROWNIES

1 1/2 cups sugar
2 large eggs
1/4 cup butter or margarine,
melted
3 tablespoons Kahlua
1 1/4 cups sifted cake flour
1 teaspoon baking powder
1/2 cup cocoa
1/2 cup finely chopped walnuts

Combine first 4 ingredients, stirring until
blended. Combine flour, baking powder, and
cocoa; stir into sugar mixture. Fold in
walnuts. Spoon into a lightly greased 9-inch
square pan.
Bake at 325° for 30 minutes or until a
wooden pick inserted in center comes out
clean; cool on a wire rack, and cut into
squares. Makes 16 brownies.
To reduce fat and calories, substitute
1/2 cup egg substitute for eggs.

RECIPE
TURTLE CARAMEL CAKE

CAKE:
1 cup chocolate chips
2 cups pecans
3/4 cup melted butter
1/2 cup evaporated milk
1 (14 ounce) bags caramels
1 1/3 cups water ( or as called for by your cake mix)
1/3 cup oil ( or as called for by your cake mix)
3 eggs ( or as called for by your cake mix)
1 (18 ounce) boxes German chocolate cake mix

Directions
Preheat oven to 350 degrees F (175 degrees C).
Lightly grease one 9x13 inch pan.
Prepare cake mix according to package directions and pour 1/2 of the batter into the prepared pan. Bake at 350 degrees F (175 degrees C) for 15 minutes.
In a saucepan melt caramels, 3/4 cup of the butter or margarine, and evaporated milk, pour over baked cake.
Sprinkle chocolate chips and chopped pecans over caramel mixture.
Pour remaining cake batter on top and bake for 20 minutes at 350 degrees F (175 degrees C).
Cool and frost.

FROSTING:
1/2 cup butter
3 tablespoons cocoa
6 tablespoons evaporated milk
1 (1 lb) box confectioners' sugar
1 teaspoon vanilla

Combine butter, cocoa, and evaporated milk in a small saucepan. Heat, stirring, until butter is melted and mixture is well blended. Remove from heat and add confectioners' sugar and vanilla. Spread over cooled cake.

Turpentine Creek Widllife Refuge 25th Anniversary Celebration
