It's White Chocolate Day over in America today!

We're privileged to have access to and use many different white chocolates, but one of our favourites is Opalys from luxury French chocolate house Valrhona.

This beautiful white chocolate couverture is almost pure white, with a delicately sweet flavour enhanced by natural vanilla. They're available as feves in the ingredient section of our shop to allow you to make stunning chocolates and desserts in your own kitchen.

Have you ever tried (or even heard of) a Tonka bean?

After seeing the name of our pear and tonka praline, people often ask us "what is tonka?". It happened so many times, that we now carry a small jar of them around with us wherever we go. After just one sniff of the open jar, people always want to find out more.

Tonka beans are the seeds of giant Cumaru trees, which are native to South America. They are slowly dried after harvesting, changing from soft to hard and intensifying the flavour.

Their flavour is unique - we're reminded of spices like vanilla and clove, with hints of liquorice, coconut, and bitter almond. The beans are best grated like nutmeg and used in infusions where a little goes a long way, but can also be grated over sweet or savoury food.

Eeeek - it's only a month to go until the first day of The Chocolate Show, and we really can't wait!
