Monday Meal Inspiration: Arugula, shallot Frittata: heat 1 tbsp olive oil in an ovenproof skillet. Sauté 1 minced shallot, 1 tbsp chopped rosemary, red pepper flakes and 5 oz box of arugula until wilted. Whisk 6 eggs in a bowl with 1/4c skim milk. Pour over greens in skillet. Cook til edges are hard then place the skillet into the oven for 25 minutes at 350 F. Cool, Invert and serve warm. #frittata   #dinner   #instafood   #nourish

Monday Meal Inspiration: Salmon Steaks. Mix 1/4 tsp starch with 1 tsp brown sugar. Sprinkle on flesh side of salmon and sauté in 1 tsp heated veg oil in a pan for 1 - 2 mins. Until brown. Transfer to baking pan. Pour glaze over salmon. Bake at 350f for 10 mins. Glaze= 2 Tbsp soy sauce, 3 Tbsp light brown sugar, 1 Tbsp sherry vinegar, 1 Tbsp whole grain mustard, 1 tsp cornstarch and 1 Tbsp water.
