Hi Jeannie. Thank you for giving us a shot and taking the time to write such a detailed review. We actually put the ketchup on the corner so that we can tell when a table has been used. Usually, when someone sits down, their instinct is to move the ketchup from the edge, so when we see an empty table where the ketchup is not at the edge, we know that table needs to be sanitized. It's part of how we manage to keep the restaurant so clean.
Aside from our beef, the bacon and and our vegan veggie patty are also organic. Also, we have a variety of organic beverage options. Our potatoes are not organic, but they are GMO free, as is the olive oil in which we fry them. Our bun, our ketchup and our barbecue sauce are natural products made without HFCS and other unhealthy ingredients. Our cheese is 6 month aged and unprocessed. So, yes you are absolutely correct that not everything is organic. As you mentioned, our prices are already higher than other restaurants (e.g., McDonalds). If we were to switch everything to organic, it would unfortunately put pricing out of reach for most of our guests. Instead, we are looking for opportunities to slowly shift more and more of the menu towards organic in a way which can minimally impact our menu pricing.
When you order, you can specify if you have a preference for softer or more crisp bacon, though it definitely should not be black. I am very sorry that happened, and we would also be happy to replace that bacon if you just let us know.
