Speaking as a physician who has made cooking with patients integral to her practice, this is very exciting. However, the goal of a medical school's teaching kitchen should be to use food in the prevention, arrest, and reversal of chronic illnesses. To that effect, we need whole plant food literacy, not more chicken, fish, or cheese based dishes. We must be skilled in making whole grains, legumes, and vegetable recipes to share with our patients. We must use whole plant food with confidence to treat hypertension, diabetes, heart disease, and protect against cancers. Anything short of that is likely to be a confusing message (to young physicians and their patients) and end up without palpable results. Ana M.
