I cannot understand the first explanation. Could somebody please explain how the normal reaction from the ground causes the wheel to turn. That normal reaction tends to separate the wheel from the ground, so once the wheel leaves the ground, that normal reaction becomes zero.

I think the second point, about the centre of mass being in front, causing the gravitational force on the centre of mass to provide torque to the wheel about the steering axis (axis of rotation) is the main reason.

So, could somebody please explain the first point about "the force from the ground" being responsible to steer the wheel as the bike tilts towards the left or right?

+Dheeraj Dhobley Do you have a bike to hand? Because you really need a bike to hand just to demonstrate it to yourself. Just hold the bike saddle and lean it left and right: Because the part of the bike tyre that is in contact with the ground is behind the steering axis, when the bike leans this results in an upwards force on the back part of the wheel. Because there is a pivot in the steering (the head set bearing) this force acts to turn the wheel upwards (or rather the hub moves closer to the ground) and the wheel turns into the lean. This force is still there with the bike vertical, but it is aligned with the steering axis and so no turning results. That's all there is to it. You change the geometry of the bike by leaning it, and the front tyre contact patch steps out of line with the rear tyre and the steering axis. So long as the bike is moving forwards, the path of the bike will now adjust to bring those three back into line. It's a negative feedback system. IF the tyre contact patch was in front of the steering axis, it would become a positive feed back system and the bike would fall.
